Became Head Chef at the Ubiquitous Chip where he worked closely with Ronnie Clydesdale promoting Scottish sourced food and the first to establish the trend for long food provenance descriptions on the menu. The restaurant, which was established in 1971 maintained its constant ‘high quality’ status in the Good Food Guide.
